Our little gathering tommorrow is based around Sweet Treats - because well we are pretty darn sweet :)
Getting in early with my recipes....excuse the lack of photos, it's 10.35pm and I'm being lazy ;)
Now I know this sounds really extravagant but it's not - I promise - I picked up some cheap banana's before they went sky high after recent weather conditions in Queensland - banana's can be frozen - sure they will go black but they will remain ok on the inside - just make sure they are wrapped really well to avoid freezer burn.
Honey Banana Biscuits - now it says biscuits but I found it was more of a mini rock cake without the rock part
Ingredients
1 egg
125g butter
pinch nutmeg
1/4 cup honey
1 cup coconut
1 large banana
1/2 cup brown sugar
2 cups self raising flour
crushed cornflakes
Method
Cream butter, sugar and honey until light and fluffy then add egg and beat well. Add peeled mashed banana and coconut then beat well. Fold in sifted flour and nutmeg. Drop teaspoonfuls of mixture onto cornflakes and roll lightly to coat mixture. Place on greased oven trays and bake the Honey Banana Biscuits in a moderate oven approximately 12 minutes or until a light golden brown.
Mixed Berry Muffins - simply the vanilla cupcake recipe with some Mixed Berry Coulis that Coles now sell in their fresh fruit section for $3.00 a squeeze pack - I didn't use a lot (it's just to taste) so went with how much color I wanted.
I'll make the scones in the morning at Lauren's house - but the CWA ladies will not approve, I make lemonade scones so not the 'right' way but they still taste pretty damn good :)
I'll also be doing some Apricot Coconut Chocolate Biscuits in the morning- the recipe for which can be found over at taste.com.au.
But for now - I'm off to do my dishes and to the land of nod.
