Delish Relish


So making preserves has now become a bit of a Hobby to me (dont forget to save your jars!!) Ive researched and googled extensivly, and after my succesful attempt at making Nectrine Jam ( See here for blog Nectrine Jam) I have the confidence to elaborate and experiment.

I couldnt find a recipe that I HAD to make, nothing really tok my fancy. So I made my own using bits and pieces from different recipes.

Here it goes:

Ingredients: Makes Approximently 750gram
  • 2 large red capsicum
  • 6 medium tomatoes
  • 1 tablespoon (20ml) oil
  • 3 medium brown onion, peeled and very finely diced
  • 2 tbl fresh grated ginger
  • 2 tbl mince garlic
  • 1/2 cup sugar
  • 2/3 cup white vinegar
  • 1 teaspoon table salt
  • Freshly ground black pepper, to taste
Method:
  1. Slice the Capsicum into quarters and deseed. Place capsicum under a high grill skin side up until 1/3 of the skin is charred.
  2. Slice a thin cross into one end of the tomatoes and place in bowl. Pour boiling water over the top ensuring all the tomato is covered. You will see the skin start to peel back.
  3. Dice onion and place into a large saucepan on medium heat with oil, garlic and ginger. Stir until soft.
  4. Peel Tomatoes,and dice. Peel Capsicum skin and dice. Add to pan.
  5. Turn heat up and add Sugar and Vinegar. Bring to the boil.
  6. Prepare your glass jars.
  7. When mix has boiled turn heat down and simmer until mix thickens.
  8. When thick pour into your prepared jars and seal.
  9. Put jar back into the pan you used to prepare them and boil for a further 10 minutes.
  10. Take from pan and place on bench till cool.

So get your Nanna on and have a go!
