I must admit I may have peaked a wee bit early in the chocolate stakes this morning after making 8 dozen mini egg and dairy free chocolate cupcakes (because goober here forgot to restock the butter for baking when they did the grocery shopping) - recipe for which is courtesy of the AWW. These little darlings were then topped with a swirl of chocolate ganache (which I readily admit I took the cheats approach with and melted the chocolate in the microwave then added the cream, stirred like a woman possessed, then returned to the microwave for 15sec just to melt completely), and were then topped with a solid half egg (like this) for the big people, and m&m's for the children.
My neighbour may have been a little bit in heaven - a self confessed non-cook (she does it so the children don't go hungry) she thinks it's wonderful having me next door and wants me to move with them when they move to their new house currently under construction - not too sure how my husband would feel about that - but judging by how the all of the children attacked when they realised it was not only chocolate cake, but had chocolate cream on top WITH more chocolate on that I would say they were a success.
Simple, easy, cheap but oh so very tasty.
Just remember - it doesn't have to cost the earth to let someone know that they are in your thoughts.
Now I must go and let the 30 odd little morsels of wonder settle in my stomach - so from my family to yours - wishing you a very Hoppy Easter filled with laughter, joy, happiness and of course more chocolate than you ever thought was humanly possible to consume.
