Recipes for Meal Making Day 10.03.11

I've said it before - I'll say it again, I'm not a huge fan of recipes - so  much to everyone's joy and delight I use the words 'until you can smell it' quite a lot in cooking.

So with that in mind....the first of our recipes for tommorrow...

Pumpkin Soup with Cheese Muffins.

Soup:
Pumpkin
Potato
Carrot
Chicken Stock
Onion

(you can add curry powder as well - I have only added a smidge to my batch because it's catering for adults and children alike)

1. Peel and dice equal parts pumpkin and potato and place in pot
2. Peel and chop carrot
3. Peel and cut into wedges onion
4. Cover in chicken stock
5. Sprinkle curry powder to taste on top
6. Bring to boil and simmer until softened.
7. Drain and reserve fluid - blend softened veg with stick blender (or you can add to a blender and do it that way - I just like to save washing up).
8. Add reserved liquid until desired thickness achieved.
9. Cool and freeze for upto 3mths in ziplock bag.

Cheese Muffins - these are best warm so defrost and give a quick zap in the microwave prior to eating.

Recipe:
  • 30g butter
  • 1 & 1/2 cups SR flour
  • 1 cup cheese
  • 1 egg
  • 1 teaspoon sugar
  • 1/2 cup milk
  • Salt and pepper
1. Preheat oven to 200C.
2. Grease muffin tins.
3. Rub-in butter into flour, add cheese, salt, pepper and sugar.
4. Beat egg and add milk.
5. Add to flour, mix well.
6. Place spoonfuls into greased pans.
7. Bake for 20 minutes.
(makes 12)

And that's it - easy peasy :)
