Craving Canneloni

Well Hiya Girls,

As Sam mentioned yesterday, it is 'Supposed" to be autumn, which means cooler nights and warmer more comforting foods.

Being in my last trimester (thank god!!) energy levels are depleting quicker, and hunger levels are rising. With the demands of two hungry princes and a very hungry king - (well so he thinks!) Ive been racking my brain for something yummy and comforting for us to eat. Im sick of the same old stuff, spag bol, lasange, meat and 3 veg etc etc. SOOOO I went on a hunt the other day and came across Chicken and Spinach Canneloni... since then I've had "Canneloni Cravings".

So when doing the weekly shop today, i thought bugger it! Im tired i have enough to do at night, Im going to make this today then throw it in the oven when the monsters- i mean children start whinging they are hungry..

Im proud of my acheivements. It wasnt as hard as people seem to believe.. However after fighting with a spoon and fighting with a makeshift piping bag, i used to fingers to stuff the mix in. Messy yes, worth it?? OH GOD YES!


So the recipe is as follows!

Ingredients
1 x Tbl Oil
1 x Onion Diced finely
2 x Tbl minced garlic
500gr Chicken Mince
3 x Frozen Spinach Squares
250gr Ricotta Cheese
1/2 Tsp Nutmeg
1 x Packet of Canneloni Tubes
700gr Bottle of Pasta Sauce
Grated Cheese
Salt and Pepper

Method
1. Preheat oven to 180 degrees
2. Heat oil in frying pan, add onion and garlic, cook till soft
3. And Chicken Mince and cook until it turns white
4. Remove mix from pan and put in bowl and wait for it too cool.
5. When cool, add Ricotta, Spinach, Nutmeg, Salt and Pepper. Mix Well.
6. In a baking tray pour enough pasta sauce to cover bottom.
7. Stuff tubes. (I folded some tin foil and held the bottom while with the other hand stuffed the mix in.)
8. Lay tubes in baking tray.
9. Pour remaining pasta sauce over the top of tubes.
10. Sprinkle with Cheese and pop in oven for 35-45 minutes.


We'll be devouring this meal with some home made garlic bread and a fresh green salad :)


So I will let you know how it goes down.. If only i could have a nice glass of white with it!
